Egypt produces two potato harvests a year and the timing is the point: spring from Upper Egypt and autumn from the Delta together bridge the European supply gap. Spunta is the primary export variety for fresh retail. Diamant and Hermes go into processing. Lady Rosetta is the chipping/crisp-line workhorse.
